A biscuit is bread baked twice so it will keep, and the ship’s biscuit that provisioned navies is the pure form of the idea. The sweet version followed sugar: Persian bakers were making small sweet cakes by the seventh century, and the technique moved into Europe with sugar itself. Small, dry and durable, they were the first baked goods that could be made well in advance.
