Curries
The dish is South Asian and ancient — grinding stones from Indus-valley Farmana still carry turmeric and ginger residue — but the word is not: curry is an English flattening of the Tamil kari, applied by colonial officials to almost anything spiced and sauced. What the region actually built was a technique: whole spices bloomed in fat, then simmered into a gravy.
