Frozen Non-Dairy Desserts
Water ices came before cream ones. Snow flavored with fruit syrup was a luxury in Rome, Persia and Tang China, sold as sharbat and granita long before anyone froze a custard. The modern non-dairy frozen dessert has two ancestors, then: that old tradition of ice and fruit, and a recent one built on nuts, coconut and soy for people who cannot or will not eat cream.
