Pizza as a named dish is Neapolitan and recent: it waited on the tomato, a New World plant Europe distrusted for two centuries, becoming ordinary food for the poor of Naples in the 1700s. The wood oven, the cheap crust and the tomato met in one city, and the combination traveled with its emigrants.
