Stew is what happens as soon as a people have a pot: tough meat, hard roots and water, left over a low fire until everything is edible. It needs no technique worth teaching and no ingredient worth trading, so it was invented everywhere and belongs to no one. Pottery from Japan’s Jōmon culture carries cooking residues 15,000 years old, and the logic has not changed since.
