Street Foods
Street food is a by-product of cities. Where people worked away from a hearth — Rome’s thermopolia, the night markets of Song-dynasty Kaifeng, the fried-food stalls of Edo — someone sold them a cooked meal they could eat standing up. It appears wherever dense wage labor does, independently and repeatedly, because the need is structural rather than cultural.
