Cakes & Pastries

Cakes began as enriched breads — honey, fat and fruit worked into a dough — which is what Egypt and Rome baked. The pastry we would recognize waited on three things becoming affordable: white flour, cheap sugar and beaten eggs. That happened in early modern Europe, which is why so many of these recipes are only a few centuries old while their ancestors are millennia.
