A ring doughnut is a piece of sweetened dough shaped around a central opening and fried in fat. Nineteenth-century versions could be raised with yeast or chemical leavening and were made from flour, milk or water, eggs, sugar, butter or other fat, and flavorings such as nutmeg or cinnamon. After frying, they might be eaten plain, rolled in sugar, or coated with a simple glaze. Recipes varied considerably by household, bakery, available fat, and the price of refined ingredients.
The ring belonged to an older and much wider family of fried doughs. American English had already adopted the word “doughnut” by the early nineteenth century, while Dutch-American and other European traditions supplied related fried cakes, including round or irregular forms. The frequently repeated origin story assigns the hole to Hanson Gregory, a New England sailor who reportedly created it in 1847. In a much later newspaper account, Gregory said he pierced the center of a dough cake so that it would cook through properly. The explanation is mechanically plausible: a ring exposes more surface area to hot fat and eliminates the dense center most likely to remain undercooked. The interview, however, was retrospective, and it does not prove that Gregory was the sole inventor or that 1847 was the ring’s first appearance.
Before specialized equipment, cooks could form rings by hand or cut a large circle and remove its center with a smaller cutter. The dough was then fried in lard, rendered animal fat, or another available cooking fat, turned for even browning, and drained. Heat rapidly set the exterior while steam expanded the interior. Careful temperature control mattered: fat that was too cool produced a heavy, oily cake, while excessive heat scorched the surface before the crumb cooked.
During the later nineteenth and twentieth centuries, purpose-made cutters, dependable chemical leaveners, commercial yeast, thermostatically controlled fryers, and mechanized doughnut machines standardized the ring. Bakeries and dedicated doughnut shops added icings, sprinkles, flavored glazes, and more consistent sizes. Vegetable shortening increasingly replaced animal fats in commercial production, while premixed flour formulations reduced labor and variation.
The ring’s significance therefore lies less in a securely documented moment of invention than in an effective design suited to repeatable frying and mechanization. Modern yeast-raised glazed rings and denser cake doughnuts preserve that geometry, although industrial formulations may include refined oils, emulsifiers, stabilizers, and concentrated sweeteners unavailable to most nineteenth-century cooks. The familiar hole remains both a cooking solution and one of the most recognizable silhouettes in commercial baking.

Historical context
The United States was approaching 23 million inhabitants, as recorded in the 1850 census, but only about one person in six lived in an urban place. Nearly 9,000 miles of railway were operating by 1850, accelerating the movement of wheat flour, refined sugar, manufactured utensils, and other bakery supplies. Chemical leaveners were beginning to simplify household baking, while much frying still depended on lard or other locally available fats. New England’s maritime economy connected its ports and households to distant supplies of sugar, spices, and coffee.
