Rice Dishes

Rice was domesticated in China’s Yangtze valley between about 8000 and 6000 BCE, and separately in the inland Niger delta of West Africa, where Oryza glaberrima was brought under cultivation some 3,000 years ago. It repaid the labor of wet cultivation with yields no other grain matched, and it fed the densest populations on earth — which is why the rice dish is less a category than a civilization’s default.
