Red yeast rice is not a single finished dish but rice deliberately colonized by pigment-producing molds, especially organisms now placed in the genus Monascus. During fermentation, white grains turn brick-red to purple, acquiring earthy aromas and compounds that can inhibit some spoilage organisms. Its historical presence in Taiwan is later than the proposed Tang-period date; a Taipei coordinate should not be treated as the site of origin.
Today the ingredient appears as whole fermented grains, powder, coloring preparations, and dietary supplements. Modern microbiology has also exposed important variation hidden by the traditional name. Some strains produce monacolin K, chemically identical to lovastatin, while contaminated or unsuitable cultures may produce the kidney-toxic mycotoxin citrinin. Regulated food production therefore depends on strain selection and testing. The enduring red color connects modern kitchens with medieval fermentation knowledge, but contemporary supplements are not equivalent to the diverse foods and starters described in historical practice.
