Boiling ground grain in water is the simplest thing that can be done with a cereal, and the oldest: grinding stones carrying wild-grain starch date back 30,000 years, well before farming. Porridge needs no oven, no leavening and no fine milling, so every grain-growing region has one — oats, millet, maize, rice, barley — reached independently.
