Grits are a hot maize porridge made by simmering coarsely ground corn in water or, in some recipes, milk. Although now strongly associated with the American South, the dish did not appear fully formed in a single place or year. Its foundations lie in Indigenous North American maize foodways, particularly those of the Southeast, where communities had cultivated corn and prepared it by pounding, cracking, sifting, boiling, and sometimes treating it with alkaline substances long before Europeans arrived.
Seventeenth-century colonists recorded Native maize porridges and adopted corn as a practical local staple. Their descriptions provide evidence for cultural exchange but do not establish 1600 as a precise date of invention. Nor were all early porridges identical to modern grits. Some were made from hominy—kernels treated with wood-ash lye or another alkali, then washed and hulled—while others used untreated cracked or ground corn. Alkali processing changes flavor, loosens hulls, and improves the nutritional availability of niacin, but contemporary products labeled grits are not necessarily nixtamalized.
Preparation was governed by available tools. Indigenous cooks used mortars and pestles or grinding stones; colonial and later rural communities also relied on water- or animal-powered mills. Coarse meal was stirred slowly into boiling water and cooked until hydrated and soft. The plain result was inexpensive and adaptable. Butter, milk, cheese, eggs, meat gravy, fish, or shrimp could turn it into a richer meal, but such additions depended on region, season, household means, and historical period rather than belonging to one original formula.
Grits became embedded in Southern food culture through unequal and intertwined histories. European settlers appropriated Indigenous crops and knowledge, while enslaved Africans and their descendants performed much of the agricultural and kitchen labor that sustained colonial and antebellum households. African culinary experience with grain porridges likely helped shape how maize was cooked and eaten, although assigning the modern dish to any single cultural source would oversimplify its formation. Grits could serve as subsistence food, plantation provisions, domestic fare, or a base for more expensive accompaniments.
Industrial milling later made texture more uniform and separated germ and bran to extend shelf life. Enrichment restored selected nutrients lost through refining, while quick and instant varieties reduced cooking time. Stone-ground grits, by contrast, retain more of the kernel and usually require longer cooking. Today, grits range from packaged breakfast cereal to restaurant dishes such as shrimp and grits. Their continuity lies less in an unchanged recipe than in the durable practice of turning maize into a warm, filling porridge.

Historical context
European colonies on the Atlantic coast of North America were still small and precarious; Jamestown was founded in 1607, while sustained English settlement farther south came later. Indigenous societies of the Southeast already maintained extensive maize agriculture supported by beans, squash, hunting, fishing, and gathering. Across the Atlantic world, colonization was moving plants, animals, people, and pathogens over thousands of kilometers. Maize had reached Europe and Africa during the sixteenth century, while warfare, dispossession, forced migration, and epidemic disease were transforming the communities from whom colonists learned to cultivate and cook it.
