Okayu is Japanese grain porridge, now most commonly made by simmering rice in substantially more water than is used for ordinary cooked rice. The grains soften, burst, and release starch, creating a preparation that can range from spoonable rice to thin gruel. It is eaten as everyday food but is especially associated with illness, recovery, infancy, old age, and occasions when a mild, easily swallowed meal is wanted.
Rice gruel was not invented at a single known moment in Japan. Porridges long predate written Japanese history, and related preparations occur throughout rice-growing East Asia. Early Japanese written traditions and state institutions show that rice was already important as food, tribute, and ritual material during the eighth century, but they do not securely establish the year 700 as the origin of okayu. Umeboshi, preserved vegetables, seaweed, fish, egg, and other toppings belong to particular later or modern contexts and were not universal components of early porridge. Nanakusa-gayu, rice porridge with seven spring herbs eaten in January, represents a related seasonal custom whose Japanese form developed over centuries under both courtly and popular influences.
Okayu mattered because water, time, and heat could transform a limited quantity of grain into a larger volume of warm food. That did not create additional nutrients, but it made rice easier to chew, swallow, and portion. The same flexibility explains its endurance: modern okayu remains hospital food, home nursing food, breakfast, and comfort food, while electric rice cookers now reproduce a technique once managed by sight, fire, and the practiced judgment of the cook.

Historical context
Japan was moving from the Asuka political order toward the Nara period. Fujiwara-kyō served as the imperial capital until 710, when the court moved to Heijō-kyō. Rulers were developing a centralized state influenced by Tang Chinese law, Buddhism, writing, and court ceremony. Wet-rice agriculture was well established, but barley, millets, legumes, gathered foods, and marine resources remained important. Rice also circulated as tax and tribute, so its ritual and political value could exceed its availability as an unrestricted daily food.
