Vegetable Dishes
Vegetables are the oldest food and the last to be treated as a dish. Foraged greens, pods and shoots fed people long before agriculture; once kitchen gardens made them reliable, cuisines began cooking them for their own sake rather than as a filler. The result is local by definition — a vegetable dish is a record of what a particular soil gave in a particular month.
