Sun-dried tomatoes are ripe tomatoes preserved by removing most of their water in warm, moving air, traditionally with direct sunlight and salt. In southern Italy, where hot, relatively dry summers coincided with the tomato harvest, this offered households a practical way to retain surplus fruit for winter. Packing them under oil, often with garlic, herbs, capers, or vinegar, became a familiar form, although oil itself does not make an inadequately dried low-acid food safe. Commercial processing now uses controlled hot-air dryers, standardized salting, pasteurization, and sealed packaging; some products sold as “sun-dried” are partly or entirely mechanically dehydrated.
No single dish arose from this preservation method. Its importance lies instead in extending tomato flavor beyond the harvest and converting fragile produce into a compact, tradable pantry ingredient. Modern sun-dried tomatoes appear in antipasti, pasta, salads, sandwiches, sauces, and baked goods far beyond Italy. Their contemporary abundance can obscure the original purpose: reducing seasonal waste and carrying the intense taste of summer into months when fresh tomatoes were unavailable.
