Historical context
The southern Caucasus and Iran lay within the Safavid political and commercial sphere, although frontier districts were repeatedly contested with the Ottoman Empire. Shah Abbas I transferred the Safavid capital to Isfahan in 1598 and promoted long-distance trade linking the Persian Gulf, the Caucasus, Central Asia, and Mediterranean markets. Most food still depended on local grain, livestock, orchards, kitchen gardens, and seasonal greens.
