Chocolate
Cacao was first used in the upper Amazon — residues at Santa Ana-La Florida in Ecuador are 5,300 years old — and became central in Mesoamerica, where the Maya and Mexica drank it bitter, frothed and spiced, and counted the beans as money. Chocolate was a drink for almost all of its history; the eating bar waited on nineteenth-century European pressing and conching.
