Gianduiotto is a small, individually wrapped confection made from gianduja: chocolate blended with finely ground roasted hazelnuts and sugar. Its characteristic form resembles an upturned boat or tapered ingot. The high proportion of hazelnut paste supplies enough oil to make a good gianduiotto softer and faster-melting than an ordinary bar of dark chocolate, with a pronounced roasted-nut aroma rather than cocoa alone.
The confection emerged in Turin during the 1860s, conventionally dated to 1865 and closely associated with the Caffarel firm and chocolatier Michele Prochet. Precise claims about a single inventor rely substantially on later commercial histories, but Turin’s broader role is secure. The city already possessed an established chocolate trade and a related preparation, gianduja, before the individually portioned sweet appeared. A familiar story says Piedmontese confectioners stretched scarce cocoa with local hazelnuts during the trade restrictions of the Napoleonic era. Hazelnuts certainly reduced the quantity of costly cocoa required, but the neat blockade-origin narrative is difficult to demonstrate and should be treated as tradition rather than settled fact.
Production begins by roasting hazelnuts, removing much of their skin and grinding them until their ruptured cells release oil and create a fluid paste. Sugar and cocoa ingredients are refined into the mixture until its texture becomes exceptionally smooth. Modern formulations may include cocoa butter, milk ingredients, emulsifiers or flavorings, while products emphasizing Piedmontese identity often specify the local Tonda Gentile hazelnut. Composition varies considerably, so neither a fixed nut percentage nor one universal recipe can be assumed.
Traditional gianduiotto production is commonly associated with cutting or extrusion rather than ordinary rigid molding. A dense ribbon of tempered or partially crystallized gianduja can be forced through a shaped opening and divided into pieces; hand methods can produce a similar form with knives or spatulas. Industrial manufacturers also use depositing and molding systems, often with recipes adjusted to flow and release reliably. The finished pieces are allowed to crystallize and are wrapped, historically making a soft confection easier to handle, sell and share.
The name invoked Gianduja, a Piedmontese stage and carnival character who became a symbol of Turin and regional identity. Early wrappers and promotion connected the sweet to that recognizable figure, turning shape, packaging and name into part of the food itself. Gianduiotto thus represents more than a chocolate recipe: it joined local hazelnut agriculture to imported cocoa and sugar, increasingly mechanized refining, branded packaging and urban retail. Modern versions range from high-hazelnut artisan pieces to firmer mass-market chocolates. Their global descendants are numerous, but the defining sensory idea remains the same—a smooth union of cocoa and roasted hazelnut that melts almost immediately on the tongue.

Historical context
Turin had recently ceased to be the capital of the newly unified Kingdom of Italy, with the capital transferred to Florence in 1865. Railways, steam transport and mechanized grinding were enlarging European markets for sugar and cacao, while Piedmont supplied commercially important hazelnuts. Chocolate was shifting from an elite beverage toward a more widely sold solid confection, although imported cocoa and sugar still depended on unequal colonial and post-emancipation labor systems.
