In 1847, J. S. Fry & Sons of Bristol marketed an eating chocolate commonly identified as “Chocolat Délicieux à Manger.” Its importance was not that Europeans had never encountered solid chocolate: cacao preparations had long been formed into cakes or tablets for storage, transport, and later dissolution, and earlier confectioners sold products intended for eating. Fry’s product is more defensibly described as an early commercially successful version of the modern molded chocolate bar.
The development followed an important change in cacao processing. A hydraulic cocoa press, associated particularly with Coenraad van Houten’s 1828 patent, could squeeze much of the fat—cocoa butter—from roasted, ground cacao. The resulting press cake could be pulverized into cocoa powder, while the separated butter became an ingredient in its own right. Fry’s manufacturing breakthrough was to recombine cocoa material, sugar, and additional cocoa butter in proportions that produced a workable paste. Warmed and mixed, it could be placed in molds and cooled into firm pieces rather than remaining a gritty paste or being prepared chiefly as a beverage.
The exact composition and sensory qualities of the 1847 product are not securely recoverable from modern recipes. It was probably darker, less refined, and texturally rougher than most present-day bars. Later machinery—including improved refiners and the conche developed in Switzerland—made chocolate particles finer and distributed fat more evenly, creating the smooth melting texture consumers now expect. Milk chocolate, successfully commercialized later in the nineteenth century, added milk solids and broadened the market further.
A molded tablet changed how chocolate could be sold and eaten. It was portable, divisible, comparatively durable, and suitable for factory production, branded packaging, and retail distribution. These qualities helped transform chocolate from a drink strongly associated with fashionable and affluent consumers into an increasingly accessible confection, although it remained a discretionary purchase rather than an everyday necessity for many households.
That expansion rested on global commodity chains. British manufacturers imported cacao from tropical regions and used large quantities of plantation-grown sugar. Both commodities carried histories of colonial control, enslaved labor, and later coercive labor systems; the cheerful appearance of the chocolate bar concealed those unequal relationships.
Modern dark chocolate bars preserve the basic technical principle demonstrated by Fry’s product: cacao solids, cocoa butter, and sugar are processed into a moldable fat-based suspension. Filled bars, milk chocolate, pralines, and countless coated confections followed, making the solid bar one of industrial food manufacturing’s most influential formats.

Historical context
Britain was the world’s leading industrial economy, with a population of roughly 27 million and rapidly growing railway, steamship, factory, and urban retail networks.
