Bicerin is a compact Turin café drink combining coffee, chocolate, and milk or cream in a small glass. Modern presentations commonly preserve visible dark and pale layers, allowing the drinker to taste dense chocolate, bitter coffee, and cool or warm cream in succession. The Piedmontese name means approximately “little glass.” Although 1763 is frequently associated with the founding of the Turin café now called Caffè Al Bicerin, it is not secure evidence that the drink’s modern formula appeared in that exact year.
Its deeper ancestry is usually traced to the bavareisa, an eighteenth-century Piedmontese family of hot beverages involving coffee, chocolate, milk or cream, and sometimes syrup. Bicerin appears to have emerged through gradual adaptation rather than a documented moment of invention. Historical recipes and proportions were not standardized, and claims assigning sole authorship to one establishment should therefore be treated cautiously. What can be defended is the drink’s close relationship to Turin’s established chocolate trade and its coffeehouse culture.
A traditional reconstruction begins with drinking chocolate made from cacao, sugar, and water or milk, cooked until smooth and relatively thick. Strong coffee is added, followed by milk, cream, or a lightly whipped cream topping. Pouring carefully can maintain contrasting layers, though the degree to which early servings always displayed the sharply defined layers seen in modern photographs is uncertain. The historical coffee would have been brewed by contemporary infusion or boiling methods. Espresso is a modern adaptation: pressure-driven espresso technology did not belong to Turin in 1763.
The glass brought together commodities with very different journeys. Coffee reached northern Italy through long-distance trade, while cacao and much sugar originated in colonial production systems across the Atlantic. Their fashionable consumption in European cafés depended partly on plantation economies and coerced labor. Milk and cream, by contrast, connected the imported ingredients to Piedmontese dairying. Serving these costly products together communicated urban refinement and made the café a setting for sociability, conversation, and display.
Bicerin endured because it remained both distinctive and adaptable. Later mechanized chocolate manufacture made chocolate more consistent and increasingly accessible, while espresso machines changed the coffee component. Refrigeration also made fresh cream easier for cafés to manage safely. Contemporary recipes range from pourable cocoa to nearly pudding-thick chocolate and from liquid cream to whipped topping. Despite these variations, the characteristic structure remains recognizable: coffee, chocolate, and dairy presented in a small transparent glass, preserving a Turin café identity without proving that every modern detail is eighteenth-century.

Historical context
Turin was the Savoyard capital of the Kingdom of Sardinia and a growing, carefully planned city of roughly tens of thousands of inhabitants. European coffeehouses were established centers of commerce, news, and sociability. Coffee, cacao, and cane sugar traveled thousands of kilometers through Mediterranean and Atlantic trade networks; much colonial sugar and cacao production depended on enslaved or otherwise coerced labor. Chocolate preparation was still labor-intensive, while pressure-driven espresso machines and modern refrigeration lay more than a century in the future.
