Breadfruit is the large, starchy fruit of Artocarpus altilis, a tree crop rather than a single prepared dish. When mature but not fully ripe, its pale flesh is cooked much like a potato or other starchy staple. It may be roasted whole in hot ashes or an earth oven, baked, boiled, steamed, sliced, or pounded. Ripe fruit becomes softer and sweeter and can be eaten cooked or incorporated into other preparations. Practices differ greatly among Pacific communities, so no universal ancient recipe can be reconstructed.

Botanical, linguistic, and archaeological research broadly connects domesticated breadfruit with New Guinea and the surrounding region. The seeded breadnut, Artocarpus camansi, is generally regarded as a principal wild or cultivated ancestor. Selection and vegetative propagation helped produce forms with fewer seeds or none at all. Genetic contributions from Artocarpus mariannensis are also important in parts of Micronesia. The history was therefore not necessarily one simple domestication followed by uniform expansion; it involved selection, cloning, movement, and regional hybridization.

The precise antiquity of individual pit-fermentation methods is uncertain, although the practice is well documented historically. Trees also fitted multilayered agroforestry systems alongside coconut, banana, taro, yam, and other useful plants.

Breadfruit mattered because it converted long-term care of trees into dependable carbohydrate food on islands where cultivable ground could be limited. Its eastward distribution records human migration, exchange, and environmental adaptation. Modern breadfruit remains roasted, boiled, fried, mashed, fermented, and milled into flour. Contemporary products are new in form, but they continue the older principle of transforming a perishable, seasonal tree crop into food that can be shared, stored, and carried.

Historical context

Communities in New Guinea and the nearby islands practiced mixed horticulture within landscapes shaped by thousands of years of plant management. Austronesian-speaking populations were expanding through Island Southeast Asia and into parts of Near and Remote Oceania, using capable seagoing canoes to move people, animals, tools, and living crops. Western Polynesia was settled later than the proposed New Guinea domestication phase, while much of central and eastern Polynesia remained uninhabited. Across the wider world, Bronze Age states flourished in Egypt and Mesopotamia, but Pacific food systems developed through decentralized village horticulture, fishing, arboriculture, and maritime exchange rather than urban grain agriculture.
