Yogurt & Fermented Dairy

Milk left warm sours on its own, so fermented dairy needed no inventor, only herders. Central Asian and Near Eastern pastoralists made a system of it, keeping cultures alive from batch to batch in skins and pots. The result kept far longer than milk, traveled better, and was digestible to people whose bodies could not handle the fresh liquid at all.
