Aaruul is a family of Mongolian dried-curd foods rather than a single standardized recipe. Today aaruul is sold in markets and packaged commercially as well as made at home. Softer, sweeter forms coexist with intensely sour, tooth-hard pieces. Despite these changes, its underlying logic remains recognizable: fermentation, separation, and dehydration transform seasonal milk into concentrated food. That continuity makes aaruul an important example of how pastoral communities engineered preservation around mobility, climate, and animal cycles rather than around permanent granaries or refrigeration.

Historical context

The Mongol conquests were linking pastoral zones, farming regions, and cities across much of Eurasia. Steppe households organized food production around mobile herds and highly seasonal pasture, while imperial movement carried people, animals, tribute, and provisions over thousands of kilometers. Milk fermentation and drying required no refrigeration, but winter disaster remained a persistent threat: deep snow or ice could prevent grazing and cause catastrophic livestock losses.
