Colombian kumis is a cultured cow’s-milk drink with a mild acidic bite, a creamy or lightly viscous body, and, in most contemporary versions, added sugar. Preparation begins by heating or pasteurizing milk. Once cooled to a temperature suitable for the starter, it is inoculated and held until bacterial fermentation converts part of the lactose into lactic acid. Falling pH gives the milk its tart flavor, suppresses many spoilage organisms and causes milk proteins to form a delicate gel. The cultured milk may then be stirred to create a drinkable consistency, sweetened, cooled and packaged. Household recipes can use a portion of an earlier batch as starter, although this produces less predictable results than a defined commercial culture. Industrial products may also employ skim-milk solids, stabilizers or different fat levels, so texture and nutrition vary considerably by brand.
Kumis became especially compatible with twentieth-century food systems. Pasteurization, controlled starter cultures, hygienic containers and an expanding cold chain made cultured milk more consistent and marketable beyond the household. Refrigeration did not stop fermentation entirely, but it slowed acid development and extended the period in which the drink retained an appealing flavor and texture. Dairy firms could consequently turn a variable fermented food into a standardized supermarket product.
Modern Colombian kumis remains nutritionally close to milk in its protein, calcium, phosphorus and vitamin B12, while fermentation changes flavor and may reduce some lactose. It is not necessarily low in sugar: sweetened commercial versions can contain substantial added carbohydrate. Its history therefore captures two sides of the industrial diet—the safer, more dependable distribution of perishable dairy foods and the reformulation of a traditional fermentation into a branded, sweetened convenience product.

Historical context
Colombia was moving unevenly toward urban and industrial food distribution. Around 1900 the country had roughly four million inhabitants, most still living in rural communities, while roads and refrigerated transport remained limited. Milk was highly perishable in the tropical lowlands, making heating, fermentation and rapid local sale important safeguards.
