Nunu is a tart, drinkable fermented cow’s milk associated especially with Fulani dairy production and with markets in Ghana and Nigeria. Fulani women have played a prominent role in processing and retailing dairy foods in many communities, carrying nunu and related products from pastoral households into roadside and urban markets. This trade can provide household income while preserving culinary knowledge, but producers may face unstable milk supplies, limited cold storage and food-safety constraints. These circumstances explain why quality and texture can differ markedly from one seller to another.
Today, nunu remains both an everyday fermented drink and part of the widely recognized fura-and-milk combination. Packaged and laboratory-controlled versions seek longer shelf life and predictable acidity, while small-batch products retain greater microbial and sensory variation. Historical context
Most West Africans lived in rural farming, herding and fishing communities, while expanding states and commercial towns linked the savanna, forest and Atlantic coast. Asante power was growing in the Gold Coast, and the Sokoto jihad would begin in 1804 farther northeast. Cattle and dairy practices moved through extensive pastoral networks, but fresh milk generally traveled only short distances because tropical heat encouraged rapid spoilage. Fermentation offered practical preservation before pasteurization, mechanical refrigeration or a dependable cold chain.
