Historical context
The central West African savanna supported Mossi kingdoms, farming settlements, pastoral communities, and long-distance markets linking forest, Sahel, and trans-Saharan routes. Most milk moved locally because heat and transport made fresh dairy exceptionally perishable. Fermentation, drying, and butter-making therefore mattered more than long-range shipment. The label “Francophone West Africa” is anachronistic for 1800: sustained French colonial rule across much of the region developed later in the nineteenth century.
