Matsoni is a set cultured milk associated especially with Georgia and the wider South Caucasus. It is usually mildly tart, spoonable, and eaten fresh rather than drained into a dense paste or dried for long storage. Modern Georgian households commonly make it from cow’s milk, while buffalo milk and, depending on local pastoral practice, sheep’s or goat’s milk can also be used. Differences in milk, starter community, temperature, and fermentation time produce textures ranging from delicate curd to firm yogurt-like gel.
Its origin cannot responsibly be assigned to the year 1700. Herding and milk processing have deep histories in the Caucasus, making an old regional tradition of sour milk entirely plausible, but that background does not by itself identify archaeological dairy residues as matsoni. The Georgian name and a recognizable preparation are supported more securely by later written, linguistic, and ethnographic evidence. Matsoni also belongs to a broad family of West and Central Asian cultured milks, including Armenian matsun and several foods commonly translated as yogurt. Their resemblance indicates connected dairying traditions, but not a securely documented single line of descent.
Traditional preparation uses a little matsoni from an earlier batch as the starter. Milk is heated—often brought to a boil in household recipes—then cooled until warm enough for fermentation. The starter is mixed in, the vessel is covered and kept warm for several hours, and the set milk is subsequently cooled. Lactic acid bacteria convert part of the milk sugar into acid. Falling pH causes milk proteins to form a gel and suppresses many spoilage organisms. Fermentation therefore made milk more manageable and palatable, although fresh matsoni remained perishable and was not equivalent to a dried preservation food such as qurut.
Matsoni may be eaten by the bowl, accompanied by bread, or served with savory foods. It can also provide acidity and body to soups, sauces, dressings, and diluted drinks. Exact historical serving patterns varied among households, seasons, and communities, so modern recipes should not automatically be projected unchanged into the eighteenth century.
Industrial dairying altered the product without eliminating domestic practice. Pasteurized milk, selected starter cultures, controlled incubation, sealed containers, and refrigeration made commercial matsoni safer and more consistent. These changes reduced the microbial variability inherent in repeatedly carrying a household starter from batch to batch. Today matsoni remains both an everyday Georgian food and a marker of regional culinary identity. Its strongest connection with older foodways lies not in a precisely dated invention, but in the still-visible technique of turning short-lived milk into a tart, cohesive food by heat, inherited culture, and time.

Historical context
The South Caucasus lay between the expanding interests of Safavid Iran, the Ottoman Empire, and Russia, while Georgian lands were divided among kingdoms and principalities. Most people lived in rural communities dependent on mixed farming, vineyards, and livestock. Roads and caravan routes connected the region with Anatolia, Iran, and the Black Sea, but fresh milk remained difficult to transport without rapid spoilage. Household fermentation therefore fitted an economy in which animals, seasonal milk production, ceramic or wooden vessels, and the repeated reuse of starter cultures were more important than refrigeration or centralized dairies.
