Dahi is a South Asian cultured milk: softly set, mildly sour, and produced when lactic-acid bacteria ferment milk sugar. It is not a single standardized formula. Household dahi varies with the animal, season, starter community, incubation temperature, and length of fermentation. Cow’s milk generally gives a lighter curd, while the higher solids and fat of buffalo milk can produce a firmer, richer one. Heating reduces competing microorganisms and changes milk proteins in ways that help create a firmer set. Backslopping with an established curd makes fermentation more predictable than relying on spontaneous souring. This method is traditional and widespread, but its entire sequence is not directly documented for 1500 BCE. Ancient fermentation could also have involved less controlled souring in vessels carrying resident microbial communities.
Once set, dahi may be eaten plain with rice, breads, lentils, or savory dishes; seasoned with vegetables and spices; whisked into drinks; churned to separate butter; or drained to make concentrated preparations. Chaas and related buttermilk drinks use churned or diluted curd, while shrikhand develops the strained curd into a sweetened dish. These are specific culinary relationships, not proof that every regional cultured milk descended through one uninterrupted recipe line.
Dahi remains important because it combines preservation, flavor, nutrition, and culinary flexibility. Fermentation consumes some lactose and creates acidity, but does not eliminate lactose or guarantee safety after poor handling. Industrial production has introduced pasteurized milk, selected starter cultures, sealed packaging, and refrigeration, yielding more consistent products. Household backslopping nevertheless continues, preserving the practical principle visible in the old word dadhi: fresh milk can be deliberately transformed into a stable, shareable curd.

Historical context
The large cities of the Indus tradition had already declined from their earlier peak, while communities across northwestern and northern South Asia combined herding with cereal agriculture. Cattle carried economic and ritual importance, and milk could be processed into curds, butter, and clarified fat without modern refrigeration. Vedic Sanskrit compositions are generally associated first with the northwest, whereas the eastern Gangetic region and Bengal followed distinct archaeological trajectories; assigning dahi’s origin specifically to modern Dhaka is therefore not supported by the early textual evidence.
