Chaas is a thin, tart cultured-milk drink, usually made by beating dahi with water and adding salt. It is especially associated today with western and northern India, although comparable diluted-yogurt and churned-milk drinks occur across South Asia. Their shared logic is economical: fermentation extends the useful life of milk, churning recovers valuable fat, and dilution makes the remaining cultured dairy serve more people.
The precise origin and medieval date of chaas are not documented securely. Premodern Indian medical and dietary literature discusses takra, a family of drinks made by churning cultured milk, sometimes with different proportions of water or retained fat. This demonstrates that closely related food technology long predates the modern recipe. It does not prove that every historical takra was identical to present-day chaas, nor that the Gujarati or Hindi name was used in Rajasthan in 1200. A medieval placement is therefore a reasonable reconstruction of an established dairy practice, not a dated invention event.
Traditionally, dahi forms when warm milk is inoculated with a little previous culture and left until sour and set. For chaas, it is churned or whisked with cool water until smooth. Salt and ground roasted cumin may be added directly. Some preparations receive a tempering of spices and curry leaves heated briefly in oil, although this richer method is not universal. Chaas is generally served fresh in a cup or metal tumbler alongside grain dishes, pulses, and vegetables.
The drink fits both pastoral and settled agricultural economies. It turns perishable milk into a fermented food, separates or reduces costly butterfat, and provides fluid with modest amounts of protein, calcium, and other dairy nutrients. Its cooling reputation is culturally important, but claims of specific medicinal effects should not be confused with clinical proof.
Today, chaas remains a household, restaurant, and packaged beverage. Refrigeration and commercial starter cultures have made production more standardized, while bottled versions may contain stabilizers and more salt than domestic recipes. Yet the central method—cultured milk, water, and savory seasoning—still expresses an old strategy for making dairy refreshing, shareable, and suited to everyday meals.

Historical context
Western India was divided among regional kingdoms and connected to ports trading across the Arabian Sea, while the Delhi Sultanate was founded in northern India in 1206. Grain agriculture, herding, and village dairying supported dense settlement in fertile areas, but arid Rajasthan made water, pasture, and seasonal mobility especially important. Milk from cattle and water buffalo was highly perishable without mechanical refrigeration, so fermentation, boiling, churning, and conversion into butter or clarified butter were practical household technologies. Written traditions already described cultured and churned milk preparations, although they do not securely date the modern name chaas to this exact year or place.
