Tarag is a Mongolian cultured milk produced by allowing lactic-acid bacteria to acidify and set milk. It belongs to a broad Eurasian family of fermented milks, but its place in Mongolia is specifically tied to pastoral households and their seasonal management of animal products. Unlike airag, in which mare’s milk undergoes both lactic and alcoholic fermentation, tarag is chiefly a lactic fermentation and normally contains little alcohol.

The milk used depends on herd, region, and season. Cow, yak, sheep, and goat milk are all associated with tarag, although their different fat and protein contents yield noticeably different textures. Sheep or yak milk can make a particularly rich, dense product; cow milk generally produces a milder form. A small amount of established tarag supplies the starter organisms. Historical temperatures, vessels, and incubation times were not standardized, so any single modern recipe is a practical reconstruction rather than a fixed early formula. Chilling halts neither fermentation nor spoilage completely, but modern refrigeration greatly extends useful storage; earlier households instead coordinated production with weather, immediate consumption, and further dairy processing.

Historical context

Most people in Mongolia lived through mobile pastoralism rather than settled farming, managing mixed herds across grassland with strongly seasonal milk yields. Khalkha Mongol leaders had submitted to Qing authority in 1691, while conflict with the Dzungar Khanate continued to shape Inner Asia. Urga, the predecessor of Ulaanbaatar, was still a mobile religious and political center and did not settle permanently at its present site until 1778. Long-distance caravan routes connected Mongolia with northern China, Tibet, Central Asia, and Russia, but everyday dairy production remained primarily a household activity.
