Reconstruction
Between about 7000 and 5700 BCE, Jiahu was a permanent village in the upper Huai River region of present-day Henan. Excavations revealed houses, storage and refuse pits, pottery, burials, tools and workshops across a settlement of roughly 50,000 square metres. Its inhabitants lived where northern grasslands and the wetter rice-growing environments of central and southern China approached one another. Their food economy combined cultivation with older practices rather than replacing foraging all at once.
Systematic flotation recovered more than 400 charred rice grains alongside wild soybean, acorns, water chestnuts, lotus and numerous weed seeds. Grain morphology, impressions and Jiahu’s position beyond the commonly proposed natural range of wild rice support habitual cultivation and at least partly domesticated rice. Its precise status remains debated: some researchers identify a mixture of wild and early domesticated forms. Quantitative archaeobotany also indicates that rice was probably a supplement within a broad diet still dominated by gathered plants, fishing and hunting, not yet the overwhelming staple it became in later Chinese farming societies.
Fish bones occurred in nearly every examined refuse pit, demonstrating the importance of freshwater fishing. A later analysis of carp species and age profiles concluded that people were probably managing common carp by about 6000 BCE, perhaps by manipulating shallow waters or ponds to encourage spawning and permit concentrated harvests. This is a scholarly inference from mortality and species-selection patterns, not direct evidence of constructed fish farms. Pig remains are present, but their domestic status and dietary importance are less secure; dogs are the site’s clearest domesticated animal.
Jiahu also preserves unusually early evidence of fermentation. Chemical analyses of residues absorbed into sixteen pottery sherds found that thirteen shared a similar composition. The best-supported interpretation is a mixed fermented drink containing rice, honey and a tartaric-acid-rich fruit, probably hawthorn and/or wild grape. Rice was strongly suggested by chemical matches and its archaeological presence, although a diagnostic rice compound was not detected. Beeswax-like compounds support honey but could conceivably derive from a similar plant wax. The exact recipe, microorganisms, method of starch conversion, alcohol content and occasions of consumption remain unknown.
Together with playable crane-bone flutes and carefully furnished burials, these foods and vessels reveal a settled community experimenting with cultivation, aquatic management, pottery storage and fermentation. Jiahu is therefore important not as a fully agricultural rice village, but as evidence for the long transition from broad-spectrum subsistence toward managed food production. Modern rice agriculture, carp cultivation and grain fermentation are not proven unbroken descendants of Jiahu practice, yet Jiahu documents remarkably early stages of technologies that later became central to East Asian food systems.
Historical context
Jiahu occupied roughly 5 hectares in a wetland-rich zone between the Yellow and Yangtze river systems. Across China, communities were experimenting independently with rice cultivation in wetter regions and millet cultivation farther north, while hunting, fishing and gathering remained important. In Southwest Asia, farming villages already cultivated cereals and legumes and managed livestock, but cities, states, writing and metal agriculture had not yet appeared. Pottery was established in East Asia and gave communities new ways to boil, store and ferment foods.

ModerateMultiple analytical techniques found a recurring chemical signature in thirteen Jiahu pottery samples consistent with a mixed fermented beverage. Rice, honey and hawthorn and/or grape are the best-supported interpretation, but not every ingredient has an exclusive biomarker.
Food identification
ModerateRice and aquatic foods are securely identified. The beverage's fruit cannot be resolved between hawthorn, wild grape or another local tartaric-acid-rich source, while the wax evidence is most consistent with honey but not wholly exclusive.
Dating
StrongNumerous calibrated radiocarbon determinations and independent luminescence analysis support occupation during approximately 7000–5700 BCE.
Preparation method
LimitedPottery residues support liquid processing and fermentation, but the sequence of cooking, starch conversion, inoculation, sealing, fermentation and serving cannot be reconstructed directly.

Historical interpretation
ModerateJiahu is defensibly interpreted as a mixed subsistence community undergoing a gradual transition toward food production. Claims of fully dominant rice agriculture are not supported by quantitative plant-remain evidence.

InterpretiveAny depiction of rice fields, fish ponds, beverage brewing or communal consumption would combine archaeological evidence with reasonable but unobserved reconstruction.
