Gueuze is a sparkling beer created by blending lambics of different ages and allowing the mixture to ferment again in the bottle. It belongs to the spontaneous-fermentation brewing culture centered on Brussels and the nearby Senne valley. Lambic itself is brewed from a mash traditionally containing malted barley and a substantial proportion of unmalted wheat, with aged hops used more for preservation than fresh hop aroma. After the hot wort is exposed to ambient microorganisms, fermentation and maturation proceed slowly in wooden vessels.
A blender combines younger lambic, which retains enough fermentable material to support renewed activity, with older beer that contributes acidity, dryness and developed aromas. References to one-, two- and three-year-old lambics describe a customary model rather than an immutable formula: the actual proportions and barrel ages depend upon the condition of each batch. The blend is filled into pressure-resistant bottles and closed, traditionally with cork and wire. Yeasts ferment remaining sugars, producing trapped carbon dioxide. Further bottle maturation integrates the blend and can generate sediment, so careful pouring may leave the deposit behind.
Gueuze emerged during the nineteenth century, but 1829 should not be treated as a securely documented moment of invention. Early appearances of the name, later accounts of blending, and the gradual availability of strong bottles are not necessarily evidence for one first batch. The technique became commercially important later in the century, when specialist blenders could purchase lambic from brewers, mature it, assemble blends and sell bottled beer. This divided production between wort-making breweries and blending houses, although some businesses performed both roles.
Traditional gueuze is generally dry, tart and highly carbonated, with aromas that drinkers describe as citrus, apple, hay, oak, leather or cellar-like. These are sensory descriptions, not added ingredients, and considerable variation follows from barrel history, microbial communities, blending decisions and bottle age. During the twentieth century, industrial lager, changing tastes and the costs of long maturation placed pressure on lambic production. Some products sold as gueuze were filtered, pasteurized, artificially carbonated or sweetened, reducing or eliminating continued bottle development.
Today, “oude geuze” or traditional old gueuze generally identifies unsweetened lambic blends that undergo bottle refermentation and maturation, while labeling rules distinguish them from less traditional products. The method survives through breweries and independent blenders and has influenced modern interest in mixed fermentation, barrel aging and cellarable beer. Its continuity is real, but not static: equipment, hygiene, business structures and regulation have changed even as blending and bottle conditioning remain central.

Historical context
Belgium was approaching independence from the United Kingdom of the Netherlands, achieved after the 1830 revolution. Brussels was a growing city of roughly 100,000 inhabitants, supplied by surrounding grain country and connected to regional markets by canals and improving roads. Brewing remained locally diverse and fermentation was not yet understood microbiologically; Pasteur’s work on yeast lay decades ahead. Stronger glass bottles and increasingly organized commercial distribution were making naturally carbonated bottled beers more practicable, while steam power and industrial brewing would soon encourage larger, more standardized production.
