Cassava flatbread

Casabe is a broad, thin flatbread made from cassava, a South American domesticate that reached the Caribbean in pre-Columbian times. It was already an established Indigenous food when Europeans entered the region around 1500. Early colonial descriptions identify cassava bread as a staple on islands including Hispaniola, but they document an existing practice rather than its invention. Its precise place and date of emergence remain unknown, and archaeological griddles alone cannot always prove that cassava was the food being cooked.

The bread’s defining achievement is the safe conversion of bitter cassava into durable food. Cassava roots contain cyanogenic glucosides that can release hydrogen cyanide when their tissues are damaged. Indigenous processors grated or rasped peeled roots, then squeezed the wet pulp—often with specialized woven presses in northern South American traditions—to remove much of the liquid. The resulting meal was broken apart, sieved and spread over a hot griddle. Thorough heating and drying reduced the remaining hazard while binding the starch into a coherent disk. Safe production therefore depended on accumulated technical knowledge; casually copying the process with high-cyanide roots can be dangerous.

Traditional casabe is generally plain, unleavened and intentionally dried rather than fermented. Fresh from the griddle it can be pliable, but further drying produces a crisp bread with little moisture. Large disks may be broken into pieces, eaten with fish or stews, dipped into liquid, or moistened before eating. Recipes and textures vary across the Dominican Republic, Haiti, Cuba, Puerto Rico, Venezuela, the Guianas and other communities with related cassava traditions.

Durability gave casabe unusual importance in the humid tropics. Fresh cassava roots deteriorate rapidly after harvest, whereas dry bread can be stored and transported. Indigenous travelers carried it, and European colonizers soon adopted it for voyages, military movement and colonial provisioning. That adoption should not be separated from the violent disruption of Indigenous life: warfare, forced labor, enslavement and introduced disease devastated the peoples who had developed and maintained the technology. Africans brought to the Americas under slavery also entered cassava-growing food systems and helped shape later Caribbean cuisines.

Cassava subsequently spread through Portuguese and other colonial networks to Africa and Asia, although the many cassava breads made there are not all direct descendants of casabe. In the modern Caribbean, casabe ranges from household and artisanal production to packaged rounds. Mechanical graters and presses may reduce labor, but the essential sequence—grating, dewatering, sieving and griddle-drying—remains recognizable. Its continued production preserves both a practical solution to tropical storage and an Indigenous food technology whose significance long predates European arrival.

Historical context

Taíno-speaking communities occupied much of the Greater Antilles in politically organized chiefdoms supported by fishing, gathering and intensive cultivation in raised or mounded fields often called conucos. Cassava, maize, sweet potatoes and peppers formed part of regional food systems linked by canoe travel. After 1492, Hispaniola became an early center of Spanish colonization. Within decades, disease, warfare, forced labor and enslavement caused catastrophic Indigenous population loss, while ships began moving American crops, animals, pathogens and people across the Atlantic.
