Feta is a moist, white Greek cheese preserved and matured in brine. Its modern protected form is made primarily from sheep’s milk, which may be blended with no more than a limited proportion of goat’s milk. It is rindless, compact but crumbly, salty and distinctly acidic. Although frequently placed in an unbroken lineage from ancient Greece, neither Homer’s description of the Cyclops making cheese nor other ancient references identify feta as it is now understood. They establish the antiquity of Greek dairying, not the origin of this particular cheese.
A late fifteenth-century account from the Greek world is often cited as an early description of cheese stored in brine. That observation supports the presence of a feta-like preservation method by 1494, but it does not securely document the product under its present name. The Greek word feta, derived from an Italian word meaning “slice,” appears later, probably reflecting the cutting of cheese into blocks for storage or sale. Feta’s emergence is therefore better understood as a gradual consolidation of pastoral practice, brining technology and commercial naming than as an invention in a single year.
Production begins by coagulating milk with rennet. The curd is cut, transferred into molds or cloths and drained without the heavy pressing used for many hard cheeses. Salt is applied to the surfaces before the blocks are placed in brine. Historically, naturally occurring lactic-acid bacteria would have driven fermentation; defined starter cultures, pasteurization and refrigeration are modern controls. Salt, acidity and immersion inhibit many spoilage organisms, allowing seasonal sheep and goat milk to be stored and transported in a warm environment. Traditional maturation could take place in wooden barrels or metal containers, while contemporary protected production follows regulated hygiene and aging requirements.
Feta became an adaptable everyday food rather than merely a table cheese. It accompanies bread, olives and vegetables; fills pies such as spanakopita; and can be baked, crumbled or served in slabs. The internationally familiar combination of feta, tomato and cucumber is modern because tomatoes reached the Mediterranean only after the Columbian Exchange and entered Greek cooking much later.
During the twentieth century, manufacturers outside Greece increasingly applied “feta” to brined cheeses made from cow’s milk. European legal disputes ultimately established feta as a Greek protected designation of origin. Current rules connect the name to specified Greek regions, local sheep and goat milk, and defined production methods. That protection transformed a broad commercial label into a legally bounded expression of Greek pastoral landscapes, even as feta-style cheeses continue to be made worldwide.

Historical context
Venice controlled Crete and important Aegean trading routes, while the Ottoman Empire dominated Constantinople and was expanding through southeastern Europe. Mediterranean merchants moved grain, wine, oil, livestock and durable cheeses among islands and ports. Columbus’s first Atlantic voyage had occurred only two years earlier; tomatoes, peppers and maize had not yet entered Greek kitchens. Most dairying remained seasonal and local, making salting, fermentation and brining essential tools for preserving milk beyond the spring and early-summer lactation period.
