Gouda is both a cheese style and the name of the Dutch town that became its celebrated marketplace. The association with 1395 concerns a formal market privilege, not a securely documented invention of the modern cheese in that year. Milk and curds came principally from farms in the surrounding regions, while Gouda provided a place where producers, merchants and officials could weigh, assess and exchange wheels. Modern Gouda is usually made from cow’s milk coagulated with rennet and acidified by lactic cultures. How closely medieval Gouda resembled this standardized process is uncertain. Medieval cheesemakers understood their milk, vessels and seasonal conditions through practice, but they did not use laboratory-selected starter cultures or modern temperature controls. The washed-curd procedure defining present-day Gouda should therefore be treated as the result of evolving craft rather than assumed to have existed fully formed in 1395. Earlier wheels also varied with pasture, herd, season, milk handling, salt and storage conditions.
Age creates several recognizable forms. Young Gouda, matured for weeks or a few months, is smooth, mild and easily sliced. Longer maturation removes moisture and concentrates fat, protein and salt. Mature wheels become firm and develop nutty, caramel-like and savory flavors; very old examples may contain crunchy crystals formed during protein breakdown. Gouda is eaten in bread meals, snacks and cooked dishes, although such uses differ by period and household.
Mechanized dairies, refrigeration, controlled cultures and global distribution eventually transformed a regional market cheese into an international category. Much cheese sold simply as “Gouda” is now made outside the Netherlands, sometimes with altered milk composition, maturation or flavoring. European protections distinguish Gouda Holland PGI and Noord-Hollandse Gouda PDO from the generic style. The enduring link is thus not an unchanged medieval recipe but a combination of Dutch dairy practice, market organization, adaptable preservation and a name that traveled farther than its original wheels.

Historical context
The County of Holland belonged to the densely connected commercial world of the Low Countries. Gouda stood where the Gouwe met the Hollandse IJssel, giving boats access to farms, towns and North Sea trade. Wet lowland soils favored grazing and dairying in areas less suitable for grain, while salting, pressing and maturation converted surplus milk into a product that could travel farther and last longer than fresh milk. Urban markets, tolls, standardized measures and civic privileges increasingly organized the exchange of rural food.
