Charqui is lean meat preserved by intensive drying, a technique deeply rooted in the Andes rather than a dish that first appeared in 1500. Its name derives from an Indigenous Andean term, commonly associated with Quechua ch’arki. Spanish forms such as charqui and charque later circulated through the Americas; English “jerky” ultimately developed from the same linguistic history.

Before European conquest, Andean pastoralists made charqui chiefly from domesticated camelids, especially llamas and probably alpacas. The high plateau offered unusually effective drying conditions: cold nights, strong daytime sun, persistent wind and low humidity. But there was no single standardized recipe. Meat could be cut into thin sheets or strips, exposed to repeated freezing and drying, and sometimes pressed or pounded to remove moisture. Salt was used in some places and periods, yet it should not be treated as universally essential to pre-Columbian production. Removing fat improved storage because fat becomes rancid more readily than lean tissue.

The resulting meat was hard, light and concentrated. It could be carried by caravan, held in household or institutional stores, and transported farther than fresh meat without rapid spoilage. Archaeozoological patterns and written colonial descriptions support the importance of preserved camelid meat, although an excavated bone assemblage rarely proves that a particular piece of flesh became charqui. Inka administration probably incorporated dried meat into wider systems of herding, storage, taxation and redistribution, alongside preserved potatoes and maize products.

After Iberian colonization, cattle, European salting practices and new commercial markets changed charqui without replacing its Andean foundations. Beef charque became especially important in colonial and later economies beyond the highlands, including mining supply networks and large-scale production in southern South America and Brazil. Preserved meat provisioned workers, soldiers, travelers and enslaved populations. Its durability made difficult transport possible, but its expansion was also connected to exploitative labor regimes and livestock frontiers.

Charqui is normally cooked rather than eaten as a tender fresh cut. It may be soaked to remove excess salt, shredded or pounded, then simmered with potatoes, maize, grains, eggs or other ingredients. Modern products range from traditional camelid charqui to heavily salted beef charque and snack-style jerky seasoned with sugar or spices. Refrigeration reduced the necessity of drying meat for ordinary transport, but the technique survives because it produces a distinctive concentrated flavor and a culturally valued food. Contemporary jerky is related linguistically and technologically, although commercial jerky recipes are not identical to Andean charqui.

Historical context

The Inka state governed much of the Andean cordillera through provincial centers, storehouses and a road system extending tens of thousands of kilometers. Llama caravans moved textiles, maize, salt and preserved foods across elevations where wheeled freight transport was impractical. The population of the Inka realm is uncertain but likely numbered several million. European invasion began in the 1530s, bringing cattle, epidemic disease, forced labor and new mining markets that transformed—but did not originate—the region’s dried-meat traditions.
