Sharmout is dried meat used in Sudanese cooking, especially as a concentrated ingredient in sauces and stews. Lean beef, goat, or mutton is cut into strips or small pieces and exposed to hot, dry air until much of its moisture has gone. The resulting meat is dark, firm, and intensely flavored. Herding provided cattle, sheep, and goats, while high temperatures and low humidity during suitable seasons made dehydration practical. Preserving surplus meat after slaughter reduced immediate waste and created food that was lighter and more durable than fresh meat.
Traditional preparation depended on controlling moisture rather than on a standardized recipe. Butchers or household cooks selected relatively lean flesh because fat becomes rancid more readily than muscle. Thin cutting increased the surface exposed to air and shortened drying time. Salt may have helped draw out water and inhibit some microbial growth, although available descriptions do not establish that every historical form was heavily salted. Meat had to be protected as far as possible from rain, insects, animals, and dirt. Once thoroughly dried, it could be broken up or pounded and cooked in a liquid dish. Rehydration and thorough cooking made the hard meat easier to eat, although cooking cannot correct every hazard created by contaminated or improperly dried food.
Drying addressed several food-system problems at once: the seasonality of slaughter, the absence of reliable cold storage, and the need to transport animal protein. Its importance was likely greatest for pastoral and rural households, but preserved meat could also enter town markets and settled kitchens. Sharmout was not merely stored protein; in stews it became a seasoning with a distinctive concentrated taste.
Mechanical refrigeration now allows fresh and frozen meat to travel farther and remain available longer, reducing dependence on sun-drying as a necessity. Sharmout nevertheless persists as a chosen ingredient and marker of Sudanese culinary identity. Modern cooks may use screened drying spaces, dehydrators, refrigeration, or sealed containers, changing the safety and regularity of production while retaining the essential transformation: lean meat preserved by removing water and later returned to the cooking pot.

Historical context
Much of central Sudan lay within the Funj Sultanate, whose capital was Sennar rather than Khartoum; Khartoum was not founded as an administrative center until the nineteenth century. Rain-fed sorghum farming and mobile or semi-mobile livestock keeping supported communities across sharply seasonal environments. Nile traffic and caravan routes connected the interior with Egypt, the Red Sea, Ethiopia, and wider northeast African markets, while food preservation still depended principally on drying, fermentation, salting, and secure storage rather than artificial refrigeration.
