Argan oil is the edible fat obtained from kernels inside the exceptionally hard stones of the argan tree, Argania spinosa, a species concentrated in the dry woodlands of southwestern Morocco. It is better understood as an ingredient than as a complete dish. Its historical importance lies in the way Amazigh communities converted a locally adapted tree into food, household medicine, animal fodder, fuel, and a marketable commodity. Although culinary argan oil was certainly established before modern industrial production, assigning its development to precisely 1200 CE is not supported by securely dated evidence.

Traditional extraction begins with ripe fruits gathered from beneath the trees and dried. Producers remove the fleshy pulp, then crack each stone between stones to release one or more kernels. For culinary oil, the kernels are lightly roasted, giving the finished product its characteristic amber-brown color and toasted, nutlike aroma. They were historically ground into a paste, often with a stone mill. The paste was then kneaded by hand, commonly with small additions of water, until oil could be separated and collected. This procedure was slow, skilled, and labor-intensive. Modern presses can extract oil more efficiently and with less added water, but roasting remains the principal distinction between many culinary oils and pale, unroasted oil intended for cosmetic use.

The oil is eaten with bread and used to dress couscous, grains, vegetables, and other prepared foods. It is also a defining ingredient in amlou, a spread usually made by combining argan oil with ground almonds and honey, although recipes and proportions vary. Because the tree thrives under semi-arid conditions and supplies several products, argan husbandry supported mixed farming and pastoral livelihoods rather than functioning merely as oil-crop cultivation. Rights of access, collection, and processing were embedded in local social arrangements, while much of the demanding kernel preparation was traditionally performed by women.

Evidence for the exact medieval scale of production, trade routes, and processing methods remains incomplete. The tree’s established regional presence and later documented practice make medieval production plausible, but continuity should not be mistaken for a directly observed origin story. Nor is the popular image of kernels routinely collected from goat droppings an adequate account of careful food-grade production; fruit gathered and processed under controlled conditions yields cleaner oil.

During the late twentieth and early twenty-first centuries, international demand—especially from cosmetics markets—greatly expanded argan oil’s value. Cooperatives, mechanical presses, quality controls, and protected geographical labeling changed production and marketing. Culinary argan oil remains rooted in southwestern Moroccan eating, while its worldwide reputation now connects an old regional food technology to debates over woodland conservation, women’s labor, adulteration, and fair distribution of commercial benefits.

Values apply to pure filtered culinary argan oil, not amlou or another preparation containing nuts, honey, bread, or water. Fatty-acid and vitamin E concentrations vary with kernels, roasting, storage, extraction, and analytical method.

Historical context

Much of Morocco formed part of the Almohad realm, whose authority extended across North Africa and into Iberia. Marrakech was a major political and commercial center, and caravan networks linked Moroccan markets with Saharan and Mediterranean trade. In the Souss and adjacent Atlantic uplands, rainfall was limited and variable; farming, herding, irrigation, and the use of drought-tolerant trees were therefore closely intertwined. Argan woodland products could sustain regional households, but the surviving evidence does not establish the volume or geographic reach of an argan-oil trade in exactly 1200 CE.
