Banku is a cooked, lightly sour starch staple strongly associated with southern Ghana. Cassava is processed separately into dough; adequate processing is important because raw cassava contains cyanogenic compounds. The doughs are combined in a pot with water and heated. Continuous stirring prevents lumps and scorching as the starches gelatinize. More dough or water may be added until the desired consistency is reached. This laborious paddling, once performed entirely by hand, remains a defining stage even where commercial mills and packaged dough now reduce earlier processing work.
The fermentation gives banku more than flavor. Acidification can improve keeping quality relative to an unfermented wet dough, although cooked banku is still perishable.
