Biltong

Biltong is southern African meat preserved in whole strips by salting, seasoning, and air-drying. Its name is usually explained from Dutch-derived words for a hindquarter or rump, “bil,” and a strip or tongue, “tong.” That etymology is clearer than the dish’s precise beginning. Drying meat long predates European settlement in southern Africa, and Indigenous communities already preserved animal foods. Colonial households and mobile pastoralists combined such environmental knowledge with European curing conventions, vinegar, salt, and spices carried through maritime trade. Biltong should therefore be understood as a convergent regional tradition rather than the documented invention of one person in 1800.

Beef is now the most familiar meat, although historical and modern biltong can also be made from kudu, springbok, and other game. Butchery produces long, comparatively thick pieces cut with the grain. Salt suppresses microbial growth and draws water from the tissue; vinegar lowers surface pH and contributes flavor, while coriander and black pepper season many established recipes. Coriander may be toasted and crushed before application. The strips are then hung apart in dry, moving air, protected from rain, insects, contamination, and excessive humidity. Historical conditions varied, and the standardized sequence of vinegar marination followed by a measured spice cure is better documented as a modern practice than as a universal early formula.

Drying concentrates flavor, protein, salt, and micronutrients while greatly reducing weight and available moisture. The finished texture depends on the cut, fat content, climate, drying time, and desired endpoint. Some biltong is firm and dark throughout; other pieces retain a softer, reddish center. Unlike many forms of jerky, it is usually dried in thick strips rather than thin slices and need not be cooked or smoke-dried. Those distinctions are typical rather than absolute.

Biltong became particularly useful in a society organized around livestock, hunting, dispersed farms, and long-distance movement. Preserved meat could travel more readily than fresh meat with herders, hunters, soldiers, and nineteenth-century wagon parties. That history also belongs to colonial expansion: access to grazing, livestock, wildlife, and travel routes was shaped by warfare, dispossession, and unequal control of land.

In the twentieth and twenty-first centuries, refrigeration made biltong less necessary for survival, yet it expanded as a snack and commercial specialty. Electric drying cabinets, controlled airflow, sealed packaging, and food-safety testing made production less dependent on weather. Modern products may include sugar, chili, flavorings, or preservatives, while artisanal makers retain simple salt, vinegar, coriander, and pepper cures. Its enduring identity rests not on one fixed recipe but on recognizable strips, concentrated meat flavor, and preservation through controlled drying.

Historical context

The Cape was a strategically important provisioning zone on maritime routes linking Europe with the Indian Ocean. Colonial settlement was expanding beyond Cape Town into a vast, sparsely populated interior occupied by African farming, pastoralist, and hunter-gatherer societies. Ox wagons and livestock supported overland movement, but journeys were slow and refrigeration did not exist. Salt, vinegar, drying, fermentation, and smoke were therefore essential preservation tools, while imported spices such as pepper and coriander reflected long-distance commercial networks.
