Cardamom is a spice rather than a self-contained dish. Historical context

Northern India was entering an era of expanding towns, states, coin use, and long-distance exchange, while communities along the southwestern coast participated in regional movement of forest products and aromatics. The Persian Empire connected territories from the Indus region toward the Mediterranean, although direct evidence for cardamom traveling that entire distance around 500 BCE is limited.
