Ceviche is a preparation of raw seafood dressed with an acidic liquid, salt, chile, and aromatics. In its best-known Peruvian form, cubes of very fresh white fish are mixed with lime juice, sliced red onion, ají, and often cilantro, then served with sweet potato, large-kernel maize, or toasted cancha. The acid denatures proteins and makes the fish appear firmer and opaque, but this chemical change is not cooking in the microbiological sense.
What can be dated with reasonable confidence is the name, not a single invention. A spelling such as “sebiche” appears in a Peruvian text associated with 1820. Its presence shows that contemporaries recognized a dish by that name, although it does not prove that ceviche originated in that year. Indigenous communities along the Pacific coast had harvested and eaten fish for thousands of years. Claims that they prepared direct ancestors of ceviche with fermented maize drink or acidic native fruit are plausible reconstructions in some accounts, but evidence for an uninterrupted recipe lineage is limited. The limes and onions central to familiar ceviche arrived from the Old World after Spanish colonization.
Preparation has also changed. Many older remembered and published styles allowed fish to stand in citrus for substantially longer than is now fashionable, producing a firmer, more uniformly whitened texture. Contemporary Peruvian cooks commonly dress small pieces only minutes before service, preserving a tender or nearly raw center. The resulting seasoned juice, enriched by fish proteins, chile, onion, and salt, is known as leche de tigre. It may be spooned over the serving or consumed separately. Species vary by region, season, price, and availability; no single white fish defines every legitimate ceviche.
During the twentieth century, restaurants and culinary promotion helped turn ceviche from a diverse coastal practice into a national emblem. Refrigeration, ice, faster transport, and improved cold chains made short-marinated fish more practical away from landing sites. Japanese migration and Nikkei cooking also shaped Peru’s wider taste for precise knife work and minimally treated seafood, especially in tiradito, although ceviche should not simply be described as a Japanese-derived dish. Across Latin America, related preparations developed with local seafood and additions such as tomato, coconut, or shellfish.
Modern food safety qualifies the romance of immediate preparation. Citrus juice does not reliably destroy all pathogenic microorganisms or parasites. Safe sourcing, uninterrupted refrigeration, hygienic handling, and parasite-control freezing where appropriate remain important. Ceviche’s lasting significance lies in how it joins Peru’s exceptionally deep maritime food history with colonial ingredients and modern systems of transport, restaurant service, and national identity—without reducing that complex history to a single legendary origin.

Historical context
Peru was still governed as a Spanish viceroyalty but stood on the threshold of independence: José de San Martín’s expedition landed on the coast in 1820, and independence was proclaimed in Lima the following year. Lima probably held roughly 60,000 inhabitants and depended on exchange among Pacific fisheries, irrigated coastal valleys, and highland producers. Limes, onions, and other introduced crops had long since become established alongside Indigenous maize, chiles, tubers, and fishing traditions. Without mechanical refrigeration, fresh fish supply remained closely tied to landing schedules, distance, weather, and rapid sale.
