Chapati is a thin, usually unleavened wheat bread cooked on a hot griddle; roti is the broader South Asian term for bread and can include rounds made from wheat, millet, sorghum, or maize. The two names therefore overlap but are not exact synonyms. A typical chapati consists of whole-wheat flour, water, and sometimes salt, with little or no fat in the dough. Its apparent simplicity rests on the established cultivation, storage, milling, and household distribution of grain.

Flat, unleavened cereal breads are far older than 1500, but identifying an ancient bread specifically as chapati is difficult. Words related to roti occur before the early modern period, while Persianate administrative and culinary writing from Mughal South Asia provides clearer evidence for named wheat breads, including chapati. Such texts show that the bread was established by the later sixteenth century; they do not securely identify one inventor, birthplace, or moment of origin. Delhi is a plausible setting for its documentation, not a demonstrated point of creation.

Historically, wheat was cleaned and ground, often on household or local millstones, into meal retaining much of the bran and germ. Water was kneaded into a supple dough, rested, divided, flattened by hand or rolled, and cooked on a tava, a flat or slightly concave metal or earthen griddle. Turning finished the first stage; direct exposure to embers or flame could make the bread inflate as steam separated its surfaces. The result was soft enough to fold and strong enough to scoop other foods.

Chapati belonged principally to everyday eating rather than to a single ceremonial cuisine. Diners tore it by hand and combined it with dal, vegetables, yogurt, pickles, ghee, or meat dishes according to region, season, religion, and means. Wheat itself carried economic distinctions. Poor harvests and high prices could force households toward coarser grains or smaller portions, while refined flour and generous fat supported richer breads in elite or commercial settings.

The bread spread well beyond northern India through migration, military service, indentured labor, trade, and the movement of South Asian communities. Related forms became established in eastern and southern Africa, the Caribbean, Fiji, Southeast Asia, and elsewhere. Local flours, oils, cooking surfaces, and names changed, and in some places “roti” came to mean a filled or wrapped meal rather than the bread alone.

Modern atta is often roller-milled to produce flour engineered for extensible dough and soft breads, unlike many historical stone-ground meals. Gas burners make puffing convenient, while presses and automated lines supply restaurants and packaged-food markets. Nevertheless, the defining technique remains recognizable: flour and water transformed rapidly on a griddle into a portable staple and an edible partner to the rest of the meal.

Estimates assume whole-wheat atta, water, optional salt, and no oil or ghee in the dough or after cooking. Flour extraction, dough hydration, thickness, moisture loss, and added fat can materially change all values.

Historical context

Northern India was governed by powerful regional states, with the Delhi Sultanate giving way to Mughal rule after Babur’s victory at Panipat in 1526. Cities, garrison towns, pilgrimage centers, and long-distance markets drew grain from extensive rural hinterlands. Wheat and barley were established winter crops, while millets remained essential in drier districts. Portuguese entry into the Indian Ocean brought American crops toward South Asia, but wheat flatbreads and their core cooking techniques predated that exchange.
