Fermentation produces gas while folding and careful dough development create enough gluten strength to retain it.
Handling is deliberately gentle. Heavy degassing would destroy the irregular internal pockets that define a successful loaf. The dough is tipped onto a well-floured surface, divided into rough rectangles, lightly stretched, proofed, and baked in a hot oven, commonly with steam during the opening stage. Steam delays crust formation, allowing expansion before the exterior becomes crisp. The resulting bread has a thin to moderately substantial crust and a moist, chewy crumb marked by holes of unequal size. These characteristics are goals rather than guarantees: flour strength, hydration, fermentation time, shaping, and oven conditions all affect the result.
Ciabatta spread rapidly beyond northeastern Italy during the 1980s and became an international bakery product. Its broad, split shape made it particularly useful for filled sandwiches, helping it enter cafés and supermarket bread ranges. As production expanded, the name came to cover markedly different loaves. Artisan versions may use extended fermentation and conspicuously open crumbs; mass-produced examples can be denser, softer, pre-baked, frozen, or packaged for longer distribution. Added oil, enzymes, emulsifiers, or improvers may appear in commercial formulations, though they do not define the original concept.
Its significance lies less in deep antiquity than in documented reinvention. Ciabatta shows how traditional fermentation vocabulary and modern marketing could combine to create a bread that appeared rustic, met contemporary sandwich demand, and acquired international recognition within a few decades.
