A corn tortilla is a thin, unleavened flatbread made from maize dough and cooked rapidly on a hot surface. In its mature traditional form, the process begins with nixtamalization: dried maize is cooked or soaked in alkaline water, commonly made with lime, then washed and ground into moist masa. Cooks shape portions by hand or, in recent centuries, with a press, and bake them on a comal without added fat. The result is flexible enough to fold around other foods yet firm enough to serve as an edible scoop.

Maize had already undergone a long history of domestication and diversification in Mexico by 1500 BCE. That fact does not, however, establish the presence of the modern tortilla at this precise date. Ancient maize remains demonstrate cultivation and consumption, while grinding stones document the conversion of kernels into meal or dough. Ceramic griddles interpreted as comales provide stronger evidence for flat cakes when they appear, but their chronology and frequency vary by region. Alkaline processing is also difficult to identify directly in archaeological deposits. A nixtamalized tortilla in Central Mexico at 1500 BCE is therefore plausible as a reconstruction, not securely demonstrated as an unchanged named dish.

Later evidence is much clearer. Before and during the early colonial period, Mesoamerican households prepared maize cakes in many sizes, thicknesses, colors, and qualities. Written descriptions portray them as everyday staples as well as foods differentiated by status and occasion. Maize was boiled with alkali, rinsed, and ground repeatedly on a metate. This labor-intensive routine was commonly performed by women and demanded hours of work each day. Finished tortillas accompanied beans, chile sauces, squash, turkey, fish, insects, and regional foods, although poorer households did not necessarily enjoy such variety.

Nixtamalization mattered technologically and nutritionally. It improved the handling properties of maize dough, helped remove the pericarp, altered flavor and aroma, added calcium when lime was used, and increased the biological availability of niacin. Those benefits made a maize-centered diet more sustainable, although adequacy still depended upon total diet, food access, and preparation practice.

After the Spanish invasion, wheat bread acquired religious and social prestige in colonial institutions, but maize tortillas remained fundamental for much of the population. Metal mills, mechanical presses, roller milling, packaged masa harina, and industrial tortilla machines later reduced or redistributed household labor and enabled mass production. Modern tortillas range from thick, hand-shaped village breads to uniform factory products containing preservatives or texture modifiers. Their exact form has changed, but the underlying combination of processed maize, water, grinding, shaping, and griddle heat remains one of Mesoamerica’s most consequential food technologies.

Historical context

Farming villages occupied many parts of Mesoamerica, while larger ceremonial and political centers were emerging, particularly toward the Gulf Coast. Maize was important but belonged to a broader food economy that included beans, squash, chile, gathered plants, hunting, and fishing. Obsidian and other valued materials moved across regional exchange networks, although transport depended on people and watercraft rather than draft animals or wheeled freight. Pottery and stone grinding equipment were established technologies, but the archaeological visibility of specialized tortilla griddles and alkaline maize processing remains uneven for this early period.
