Historical context
Spanish Manila had been established for about three decades and was the Asian terminus of the galleon route to Acapulco. Mexican silver, Chinese silk and ceramics, and Southeast Asian provisions moved through its markets, while coastal and riverine communities continued older fishing and trading practices. Refrigeration and mechanical canning did not exist; fresh tropical fish therefore had to be eaten quickly, fermented, salted, smoked, or dried. Newly introduced American crops, including maize, sweet potato, and chile, were beginning to circulate in parts of maritime Asia, although adoption varied widely.
