Doenjang is a salty, strongly aromatic Korean paste made by fermenting soybeans. In its familiar traditional form, it is the solid counterpart to ganjang, or soy sauce: both can emerge from the same crock of fermented soybean blocks and brine. Doenjang supplies savor and body to soups and stews, seasons vegetables, and forms the base of dipping mixtures. Its flavor varies from earthy and nutty to sharply pungent according to the beans, salt concentration, microorganisms, weather, and length of maturation.

Production begins with soybeans that are soaked, cooked, and crushed. The mash is shaped into blocks called meju, which are dried and allowed to ripen through the activity of naturally occurring molds and bacteria. Traditionally, these blocks may be tied with rice straw and suspended in a ventilated place. They are later cleaned and submerged in salted water inside an earthenware vessel. After fermentation, the liquid is separated and matured as ganjang; the solids are mashed, salted as necessary, and aged as doenjang. Details differ substantially among households and regions, so this method should not be treated as a single fixed ancient recipe.

The paste has deep historical roots, but assigning its origin to precisely 300 CE exceeds the evidence. Chinese accounts associated with the third-century Korean kingdoms describe the people of Goguryeo as skilled in producing fermented foods or condiments. Such testimony supports an established fermentation culture, not an unambiguous identification of modern doenjang. Later Korean written evidence more clearly attests soybean sauces and pastes, while still leaving changes in terminology and technique to be reconstructed. Meju-based production as now recognized is therefore best understood as the result of a long development rather than an invention securely documented in one year.

Fermentation addressed practical and culinary needs. Soybeans offered abundant protein but required cooking, and their harvest was seasonal. Converting them into salted, matured condiments extended storage and created concentrated flavors capable of enlivening grain, vegetable, and soup-based meals. Household production also turned local microbial communities and seasonal conditions into part of the food-making process. Salt was essential to preservation and microbial control, although historically it was a valuable commodity and modern consumption of heavily salted paste can contribute substantial sodium.

Contemporary doenjang ranges from farmhouse and household batches to factory-made products fermented with controlled cultures. Some commercial versions mature more quickly or include wheat, flavorings, sweeteners, or other soybean pastes, whereas traditionally framed varieties emphasize soybeans, salt, water, and meju. Despite these changes, the enduring method—cooking beans, cultivating fermentation, salting, separating liquid from solids, and aging the paste—connects present-day Korean kitchens with a much older East Asian practice of preserving legumes through microbial transformation.

Historical context

The Korean Peninsula was divided among expanding states and regional societies, including Goguryeo, Baekje, Silla, and the Gaya polities. Goguryeo also occupied territory in southern Manchuria, making modern national boundaries misleading. Communities cultivated cereals and legumes, raised animals, fished, and exchanged goods through networks linking the peninsula with Chinese dynasties, the steppe, and the Japanese archipelago. Written descriptions of Korean societies largely survive through elite Chinese historical compilations; they offer valuable outside observations but rarely provide complete recipes or precise food terminology.
