Dried mulberries are ripe mulberry fruits preserved by removing most of their moisture. Fresh mulberries are soft, easily crushed, and quick to ferment or spoil after picking. In the dry summers of much of Iran, Anatolia, and Central Asia, spreading sound fruit in the sun offered a simple solution: the berries became lighter, sweeter-tasting, and sufficiently stable for storage. The result was not a formal dish with one recipe but a preserved food made at household and orchard scale.

Mulberries had a particularly useful place in cultivated landscapes. White mulberry, Morus alba, was important to sericulture because silkworms feed on its leaves, while white, red, and black-fruited mulberries were grown for human consumption in different parts of western and central Asia. These roles sometimes overlapped, but it would be misleading to assume that every fruit tree was planted for silk. Medieval Persian-language medical, agricultural, and culinary traditions recognized mulberries, although evidence for a single, precisely dated origin of dried mulberries is lacking. The year 1200 is therefore best understood as a representative medieval setting, not the invention date of the food.

Preparation required little specialized equipment. Fruit could be shaken or picked onto cloths, sorted to remove leaves and damaged berries, and laid on clean mats, trays, rooftops, or other sunlit surfaces. Turning and protection from damp, insects, dust, and animals would have improved the result; these details are reasonable reconstructions from traditional drying practice rather than direct observations of one medieval operation. Fully dried berries could be kept in sacks or jars. In sufficiently arid conditions, their lower moisture content delayed microbial spoilage, although poor drying or humid storage still risked mold and infestation.

Dried mulberries could be eaten alone, combined with nuts and other dried fruits, softened in water, or used where concentrated fruit sweetness was welcome. Their compactness made them practical provisions for households, pastoral movement, and journeys. Long-distance trade is plausible, especially along routes connecting Iranian and Central Asian towns, but much production was probably consumed near the orchard; the scale of medieval commerce specifically in dried mulberries is not securely quantified.

The same preservation logic remains visible today. Dried white mulberries are sold in markets from Türkiye and Iran to Afghanistan and Central Asia, and increasingly through international health-food commerce. Modern products may be mechanically dehydrated, screened, packaged, and transported under controlled conditions, yet many are still sun-dried. Their continuity lies less in an unchanged medieval recipe than in a durable response to seasonality: converting a fragile fruit into concentrated food that can outlast the harvest.

Historical context

Anatolia was divided among the Byzantine successor states and the Seljuk Sultanate of Rum, while Iranian and Central Asian cities belonged to interconnected Islamic commercial and scholarly worlds. The Mongol conquests beginning in Central Asia after 1219 would soon reorder states, migration, and caravan traffic across Eurasia. Irrigated gardens and orchards supplied cities in otherwise dry environments, and caravan routes linked markets over hundreds or even thousands of kilometres. Sericulture had already spread far west of China centuries earlier, making mulberry trees valuable for leaves as well as fruit in some regions.
