Emmental is a firm cow’s-milk cheese associated with the Emme valley in the Swiss canton of Bern. Its modern identity rests on large cooked and pressed wheels, a mild sweet-nutty flavor, and the rounded holes known as “eyes.” Those eyes form when propionic-acid bacteria consume fermentation products during warm ripening and release carbon dioxide, which gathers in openings within the elastic paste.

A date of 1293 is frequently attached to the history of cheese in the Emmental region, but it should not be treated as an eyewitness description of the modern cheese. Medieval documents can establish dairying, cheese obligations, or trade without specifying microbial cultures, hole formation, wheel size, or the complete manufacturing method. The emergence of recognizably modern Emmental was gradual, and its characteristic large-wheel production is more securely associated with later Alpine and early modern commercial cheesemaking.

The basic process converts highly perishable milk into a concentrated food that can be stored and transported. Traditionally, raw cow’s milk was warmed in a large vessel and coagulated with rennet. Cheesemakers cut the curd finely, heated it to expel whey, transferred it into molds, pressed it, and salted the wheel, commonly in brine. Ripening required repeated turning and control of temperature and humidity. A warmer phase encouraged the gas-producing fermentation responsible for the eyes, while extended maturation developed flavor and texture. Exact medieval procedures cannot be reconstructed from the date alone, and modern starter cultures provide much greater control than earlier makers possessed.

Large wheels made economic sense where summer pastures produced more milk than households could consume fresh. Cheese preserved part of that seasonal surplus and turned it into a commodity for valley towns and longer-distance markets. Production nevertheless demanded substantial pooled milk, equipment, fuel, labor, and access to suitable aging rooms. It therefore reflects not only pastoral life but also organized dairying and commercial exchange.

During the nineteenth and twentieth centuries, Emmental-style manufacture spread beyond Switzerland. Related cheeses were produced in France, Germany, Scandinavia, North America, and elsewhere, while “Swiss cheese” became a broad commercial category identified visually by holes. Pasteurization, selected bacterial cultures, mechanical presses, refrigeration, and standardized grading made results more predictable. Some mass-market versions became milder, younger, and smaller than traditional wheels.

Today, protected Swiss Emmentaler and numerous international Emmental-style cheeses coexist. The cheese is eaten sliced, grated, or melted and is a familiar component of some fondue recipes. Its continuity lies chiefly in the preservation logic and cooked-curd craft; claims that the full modern product already existed in 1293 go beyond the surviving evidence.

Historical context

The Alpine region was divided among lordships, monasteries, towns, and rural communities within the Holy Roman Empire. The Swiss Confederacy was only beginning to take political form after the traditional pact of 1291. Seasonal movement of cattle between valleys and high pastures supported dairy production, while pack animals carried durable goods across difficult mountain routes. Growing towns created markets for foods that traveled better than fresh milk, giving salted and ripened cheese economic advantages.
