Freekeh is not a separate cereal species but a processed wheat product. Farmers harvest the crop while its kernels are developed yet still green and moist. In the Levant, durum wheat is commonly used today, although other wheats can undergo comparable treatment. The grain’s identity therefore comes from harvest timing and processing rather than from one fixed recipe. It may be sold whole or cracked and cooked in pilafs, soups, stuffings, and dishes with meat, legumes, or yogurt.

Making freekeh begins with cutting immature wheat and allowing the sheaves to wilt or partly dry. Traditionally, the stalks and chaff are exposed to fire. Their drier outer material burns readily, while moisture inside the kernels helps protect them from complete combustion. The roasted grain is then dried, rubbed to remove husks and burnt material, threshed, cleaned, and sometimes cracked. Fire contributes the characteristic smoky aroma, but intensity varies greatly. Modern producers may use controlled burners and mechanical cleaning, so packaged freekeh need not taste as smoky as grain made over an open field fire.

Medieval Arabic culinary vocabulary and recipes provide evidence that farik, or roasted green wheat, was known by around the period represented here. These texts support its presence in the medieval Arabic-speaking food world, but they do not securely identify its inventor or exact birthplace. Claims that freekeh originated in one particular village, siege, or accidental fire should therefore be treated as tradition rather than demonstrated history. The processing method may be older than its surviving written attestations, but an earlier origin cannot be dated precisely from the available evidence alone.

As food, freekeh combined durability with culinary versatility. Harvesting before full ripeness could rescue part of a crop threatened by damage or seasonal risk, while drying reduced the moisture that encourages spoilage. It also imposed costs: cutting early reduced the time available for kernels to fill, and roasting, rubbing, and cleaning demanded labor and skill. Once processed, the grain could be stored and simmered much like other durable wheat foods. Whole kernels remain chewy; cracked freekeh cooks more quickly and produces a softer texture.

Freekeh continued as a regional staple rather than disappearing after the medieval period. It is still prepared with broth, lamb, chicken, chickpeas, nuts, or vegetables, with recipes varying across households and communities. During the modern era, mechanization altered harvesting and roasting, while international marketing often recast it as an ancient “whole grain” or health food. That language can oversimplify its history, yet the modern product retains the essential logic of the older technique: green wheat transformed by heat, drying, and abrasion into a storable, distinctive food.

The Levant lay between Ayyubid-ruled cities and the remaining Crusader states, with warfare and negotiation occurring alongside active regional commerce. Damascus, Aleppo, Jerusalem, and Mediterranean ports connected grain-producing hinterlands to urban markets and long-distance routes carrying spices, sugar, textiles, and ceramics. Most wheat still came from rain-fed agriculture, making harvest timing and rainfall crucial. Watermills and animal-powered mills processed cereals, while drying, roasting, and careful storage helped households manage seasonal supply without refrigeration.
